Raw Cacao

A rich, velvety dark chocolate mousse made from creamy avocado, raw cacao, and naturally sweet Medjool dates. Rich in healthy monounsaturated fats and naturally occurring plant compounds, it provides a deeply satisfying chocolate treat without refined sugars or dairy.

Ingredients

  • 2 large ripe avocados (peeled and pitted)
  • ⅓ cup raw cacao powder (unsweetened)
  • 6 Medjool dates (pitted and soaked in warm water for 10 minutes)
  • ½ cup homemade almond milk or coconut milk
  • 1 tsp pure vanilla extract
  • 1 pinch of fine sea salt
  • ¼ tsp ground cinnamon
  • A tiny pinch of ground chili (optional)

For Topping:

  • 2 tbsp toasted crushed hazelnuts or pistachios
  • Fresh raspberries or pomegranate seeds
  • Fresh mint leaves

Instructions

  1. Place the soaked dates, avocado flesh, raw cacao powder, almond milk, vanilla extract, cinnamon, and sea salt into a high-speed blender or food processor.
  2. Blend on high speed for 1–2 minutes, scraping down the sides as needed, until the mixture is completely smooth, glossy, and velvety.
  3. Taste and adjust the sweetness and chocolate intensity. Add another date for more sweetness or a little more cacao for a deeper chocolate flavor. If the mousse is too thick, add 1–2 tablespoons of almond milk.
  4. Spoon the mousse into small dessert glasses or jars and chill in the refrigerator for at least 1 hour before serving.
  5. Garnish with crushed hazelnuts or pistachios, fresh berries, and a sprig of mint just before serving.
